excellent cookware
I love this pan! I've been cooking for a living for more than 25 years and this is one of the best teflon pans I've ever used. Nice heavy aluminum, not one that feels like it was made out of a pop can. Handle feels very strong and is comfortable to grip. Made my husband fried eggs without using any grease and the eggs came out perfect. You taste the eggs not the grease. It came clean with just a quick wipe. The enamel on the outside is beautiful,shading from light to deep blue. I am looking forward to getting more of this cookware.

Great pan!
Much better than expected. This is wonderful for all the frying we do! Love it and will definitely buy it again if it holds up over time.
If you want a disposable skillet, this is it....it doesn't last
I hardly ever do reviews on Amazon, but I'm doing this to save you the disappointment I have experienced.

I got this skillet in December 2011 (not through Amazon). I used the skillet with extreme caution so as not to damage the inside. I have used these types of skillets as long as they have been made and until now got years of service out of them. I NEVER put it or for that matter any metal skillet or pan in the dishwasher or used a metal utensil in it. After no more than 6 uses, the inside coating started peeling out in chunks up to 1 inch.

I contacted the company and was told I had to ship it to them (me paying for the shipping). They would then review the product and determine then if they would replace or if it had not been taken care of properly. I was also told it could take up to 12 weeks before I may receive a replacement. So I'm without a big skillet for that long--I only have 1 12-1/2 inch skillet. Would they actually replace? Who knows... I...

High heat temperatures should only be used for boiling water for vegetables or pasta, or for reducing the consistency of stocks or sauces. High heats should never be used to preheat a pan before lowering the heat for cooking. Cast iron retains heat so efficiently that overheating will cause food to burn or stick.

The vitreous enamel surface is impermeable and therefore ideal for raw or cooked food storage, and for marinating with acidic ingredients such as wine.

Cooking tips for shallow frying and sauteing:

For frying and sauteing, the fat should be hot before adding food. Bring the pan and fat or oil to the correct temperature together. Oil is hot enough when there is a gentle ripple in its surface. For butter and other fats, bubbling or foaming indicates the correct temperature. If either begins smoking, or if butter begins browning, it is too hot and should be cooled slightly before proceeding. The quickest way to do this is to remove the pan from the heat source for a few moments. For longer shallow frying a mixture of oil and butter gives excellent results.

If there is one pan you want this is it, can do everything. Cover fits 11.75 skillet
I decided to try my first Le Creuset around 6 months ago because I had heard such great things about the cookware: lasts so long you pass it down, great results, easy to clean and take care of for cast iron.

They were all true and then some. I started with the almost 11.75 inch skillet. It worked fantastic. It is fairly non-stick to start with and then it just gets better. I know some people season their Le Creuset. Following the instruction booklet, I don't. I then got a dutch oven for whole chickens, pot roasts, stews, soups, and that has been fantastic.

To round out my collection I was looking for a casserole. Now you can get 'bakers' and casseroles from Le Creuset that are not cast iron. I specifically wanted cast iron because of my previous great experiences. I was pleased to find this and the cover was a big plus. Love this cookware
I absolutely adore this cookware. My friend told me how often she uses this multi-purpose brasier, so I bought one. It's so beautiful that I leave it out on my cooktop. I use it several times a week. It's perfect for sautéing and one pot meals. After my disastrous relationship with All-Clad, I am enjoying using a quality piece from a company that you can count on.

You can sear, then use the seasoned brasier to cook other vegetables and it cleans up quick and easily.
Work horse of the kitchen!
I purchased the 3 1/2 quart LeCreuset braiser in December, 2009. I have had the 2 1/4 quart for many years and love it. Since purchasing the 3 1/2 qt I am using it constantly and don't even put it away, but leave it on the stovetop. I've done eggs over, omelets, roasted vegetables, baked pasta dishes, caramelized onions and allot more and the pan is wonderful. As far as roasting veggies in the pan you won't get a better flavor to the vegetables. Even after caramelizing onions over a flame for quite a while the pan required barely any effort to clean. There is a previous review stating that LeCreuset is delicate which is ridiculous. This line is far from delicate and the truth is that the line is a workhorse. If you have sticking you are cooking at too high a temperature. Should you have sticking just soak in hot water with a little Dawn and the pan should wash right up.
